Tomato Basil Soup – The Conclusion of Soup Week

This is the end of soup week here at TMJ Hope. We hope you have enjoyed all of our TMJ friendly recipes! Did you try any of them? If not, are you planning to? The best part about these recipes is that the whole family can enjoy them, so you do not have to make two separate meals.

Tomato Basil Soup:
1 cup chopped onion
5 cloves garlic, smashed
2-3 tablespoons olive oil
3 28 ounce cans whole tomatoes
2 cups vegetable stock or chicken stock
2 teaspoons balsamic vinegar
1 cup heavy cream
1/2 cup chopped fresh basil
Salt and Pepper to taste
Saute onion and garlic in olive oil in large saucepan until tender
Add tomatoes and vegetable/chicken stock. Bring to boil and remove from heat
Pour into blender and process until pureed. You may have to do this in sections…it is a lot of soup.  Personally, I use an immersion (hand) blender. I have this one from KitchenAid and really like it .
Stir in vinegar, cream, basil, salt and pepper.
Serve with grilled cheese sandwiches! 🙂
