It is so incredibly hot here in Georgia that I really don’t feel like turning on the oven.. a perfect excuse to use the new crockpot we got recently. If you don’t have one, you’re really missing out – I have to admit, I was a bit of a crockpot snob before I tried it for myself. There is a whole world of crockpot cooking out there that is perfect for TMJ disorder patients!
It turns out, you can make anything in a crockpot, from stews, soups, and rice dishes to cakes and breakfast items. You can even make your own yogurt!!!
Here are some crockpot recipes I thought you all would enjoy:
French Onion Soup
Ingredients:
1 quart beef bouillon or brown stock
3 medium yellow onions, thinly sliced
3 tablespoons butter
1 tablespoon sugar
2 tablespoons flour
1 cup Parmesan cheese, grated (you can also use Fontina or Gruyere, or a combination of them)
1/4 cup dry vermouth or cognac, (optional)
1/2 teaspoon salt
Directions:
1. Pour bouillon or stock into crockpot.
2. Cook onions slowly in butter (about 15 minutes) in large covered skillet. Stir occasionally.
3. Uncover and add salt, sugar, flour and vermouth. Stir well, then pour stock in slow cooker.
4. Cover and cook on LOW 6 to 8 hours. (HIGH: 3 hours).
5. Before serving, top with grated cheese.
Bananas Fostere
Ingredients:
12 bananas, quartered
1 cup flaked coconut
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup dark corn syrup
2/3 cup butter, melted
2 teaspoons lemon zest, grated
1/4 cup lemon juice
2 teaspoons rum
12 slices pound cake
1 quart vanilla ice cream
Directions
1. Combine bananas and coconut in slow cooker.
2. Combine cinnamon, salt, corn syrup, butter, lemon zest, lemon juice and rum. Pour over bananas. Cover; cook on Low 1-2 hours
3. Pour sauce over pound cake and ice cream.
Slow Cooker Mac and Cheese
Ingredients:
8 ounces macaroni, cooked and drained (6 cups cooked)
1/2 teaspoon salt
3 cups sharp processed cheese, shredded
2 tablespoons oil
1/4 cup butter, melted
13 ounces evaporated milk, canned
2 tablespoons onion, minced
1 1/2 cups milk
Directions:
1. Toss cooked macaroni in 2 tablespoons oil.
2. Add all remaining ingredients. Pour into lightly greased stoneware. Stir well.
3. Cover and cook on LOW 3 to 4 hours. Stir occasionally.
